Gluten Free, Dairy Free Bison Meatloaf… with some spice!
Surprise your heat-loving Fire-types with this sweet and sassy meatloaf! This goes great with baked acorn or butternut squash or cut up beautiful striped delicata squash in 1/2 – 1 inch squares and cook in butter or coconut oil on medium heat in fry pan until cooked through. I like to cook them a little longer until they have a nice crisp- kinda’ like a naturally carmelized edge with the natural sugars in the squash. Serve with a simple salad to lighten things up a bit and get some greens in ya’ too! It’s an easy meal!
Free of Dairy, Gluten, Nuts, Corn, Soy
1.25 -2 hours depending on bakeware used
*Use all organic and/or farm-raised ingredients.
1 lb. ground bison
1 1/2 cups shredded, raw delicata or butternut squash (Both can be eaten with skin left on. The sweetness of the squash help to balance the heat.)
1 large egg
1/4 cup finely chopped onion
1/4 cup maple syrup (balances the heat)
2 tablespoon ground sage
2 teaspoon red pepper flakes (more if you like it extra spicy)
2 teaspoon fennel seeds (carminative- helps digest meat and fat which is why it is a common ingredient in sausage)
1 teaspoon dried thyme
1 teaspoon ground white pepper (this also adds heat to the dish)
1 teaspoon salt (Celtic Sea Salt has a stronger flavor that is good in this recipe)
Preheat oven to 350 degrees Fahrenheit.
Prepare ingredients and mix very well.
Coat a bread pan with Safflower or Walnut oil.
Place buffalo mixture in a standard bread pan (5 1/2” x 3” x 2 1/4” high) or, if you like a crispy top, and more of it, I use a Le Creuset brand, medium-sized casserole bake dish which, when the meatloaf is spread out, is about 2” thick.
Cover with aluminum foil. Uncover at the 1 hour to 1 hour 15 minute point and cook for another 20 minutes to evaporate juices and to make a crispier top. Or, drain the juices at this point and continue to cook for another 20 minutes or until done. Save juices to drizzle over slices meatloaf and sides, such as mashed potatoes. For an even crispier top, at the end, set the broiler to medium and broil until the top is done to your liking. Keep an eye on it, it is easy to over-cook food when broiling!
Bake for 1 1/2 hours to 2 hours, until cooked all the way through (there is no pink color in the middle when cut open).
There are a lot of spices, but they go so well together and is generally not too spicy for those who do not like much heat.
Body-type and Wellness Insights
This recipe is well-suited for the Air-type. The denseness of the meat and squash help to ground the light, Air-type and the herbs and spices help their sensitive constitution to digest the food better, to then better nourish the body. Fire-types will likely enjoy the sweet, spicy combination of flavors and as long as there is not an over-abundance of spice (including ketchup) added to the meat, and the side-dishes are not too Fiery, this dish does not cause too much imbalance for the Fire-type. The Earth-type also, will enjoy the sweet flavor, but this dish can be too dense and heavy for this type. It is better that they keep their portions moderate and eat this dish for breakfast or lunch. If the Earth-type eats too much of this dish, they tend to feel very heavy and even bloated, although the natural, low-fat characteristic of the buffalo meat and the herbs and spices can help to prevent this when eaten in moderation.
