Breakfast Wrap

Especially satisfying as a well-rounded breakfast or a light dinner.

Oh, to find a gluten-free tortilla wraps that is actually really good- I’m still on the hunt. My hubby likes the tomato-basil type wraps, which add some additional flavor to this yummy, warm and festive breakfast.

I will say though, the veggies and eggs by themselves are a pretty great duo, if you’re the sans-gluten type.

There’s a little something for everyone in this dish- and you can customize it with your favorites or simply use seasonal veggies!

Breakfast Wrap

Free of Dairy (opt.), Gluten (look for GF wraps), Nuts, Corn (check wrap ingredients), Soy

1 medium to large serving

Ingredients

*Use all organic and/or farm-raised ingredients.

Tortilla style wrap

1/2 to 1 cup vegetables chopped to sauté (onions, garlic, garlic scapes, onions, ramps, chard, sweet peppers- or your favorites)

olive oil to coat pan

1-2 eggs

Avocado

Thousand Island Dressing and/or Salsa

Directions

  • Sauté vegetables on medium-low from firmest to lightest (ex. spinach) until slightly crisp or soft.
  • When veggies are done, transfer them to a bowl and cook 1-2 eggs in the same pan. I simply crack them in the pan and “scramble” them with the spatula as I stir.
  • Add salt and pepper to taste.
  • Warm tortilla if desired.
  • When eggs are done cooking, add eggs, cooked veggies and a couple of slices of avocado to the wrap.
  • Finish with dressing or salsa.
  • Wrap and enjoy!

Earth-types can add more veggies and may even decide to not have eggs. Of all the types, Earth-types are the most likely to skip breakfast as their system does not quite feel ready to digest. Listen to your body. Keep it light.

Fire-types, is this is a great breakfast meal for you! While you may also enjoy meat for breakfast, the eggs will hold you over well- as well as get some veggies in you with your first meal of the day!

Air and Water-types, keep it moderate even if you’re very hungry. Good, thorough digestion is most important for you. This is a great one for you too! Warm, nourishing foods are especially important for these types. Cold cereals cool the digestive system, especially when eaten as the first meal. Air and Water-types benefit from warm food as their first meal of the day.
