The Dairy Free Gluten Free Banana Bread that doesn’t taste DF GF!

Each time I make this people can’t believe this is dairy free and gluten free!

One time I forgot to “warn” the people I was serving what looked like “normal” banana bread that it was actually dairy and gluten free. They didn’t even notice the difference! That’s how good this is!

A word of caution… coconut flour has lots of good fiber in it. Yes, there is such thing as too much of a good thing. Drink lots of water and start out with just one or two pieces of bread the first day.

 Oh, these can be made into muffins too!

Dairy Free Gluten Free Banana Bread

Free of Dairy, Gluten, Nuts, Corn, Soy

Ingredients

*Use all organic and/or farm-raised ingredients.

1 ripe banana, mashed

8 eggs

1/2 cup coconut milk (shake can before opening to distribute contents)

1/2 cup sucanat or brown sugar

2 teaspoons vanilla extract

1/2 teaspoon salt

3/4 cup sifted coconut flour

1 teaspoon baking powder

Directions

Preheat oven to 350 degrees F (175 C)

Blend together mashed banana, eggs, coconut milk, sugar, vanilla extract, and salt in a medium-sized bowl.

Combine coconut flour with baking powder in a large bowl.

Gradually add in wet mixture to dry ingredients while stirring with a whisk.

Pour into greased (coconut oil) 9x5x3-inch loaf  pan and bake at 350 degrees F (175 C) for 60 minutes.

Remove from oven and let cool.

That reminds me, while seemingly innocent, these coconut flour recipes are so yummy and taste so much more ‘normal’ than other gluten-free recipes, you’ll need to mind your portions- not only because they still contain sugar… but because they are so fiber-full that if you are not consuming even your daily minimum of water- you can very quickly find yourself constipated!
