Sweet and nourishing – great salad for Air-types!

A beautiful and tasty salad…

The Doctrine of Signatures is very present in beets. The blood-like juices show us that they are a great blood tonic (blood cleaner and fortifier). Also, the red veins in the large leaves look like veins in the human body- which reinforces this signature. Foods work like herbal medicine, but they are less concentrated. This means that if we want to remedy something with food- we can do this  by eating certain foods over time; likewise, if we have habits of eating only certain foods, this can throw us off balance.

Golden Beet, Peach and Goat Cheese Salad

Free of Dairy (goat), Gluten, Nuts, Corn, Eggs, Soy

Ingredients

*Use all organic and/or farm-raised ingredients.

2  lbs. beets (golden or combo) cooked, chilled, skinned and sliced

1 1/2 cups julienne cut peaches

1 cup thinly sliced red onion (this is optional, for those who show a lot of Air characteristics, like me, the raw onion is not favorable- although it balances the salad nicely)

2  Tablespoons chopped fresh basil

2  Tablespoons champagne vinegar (or other white wine vinegar- I make my own. Just save old, undesired, and remaining wine in a glass pitcher, it will naturally ferment, leaving you with your very own wine vinegar, at a fraction of the price! Have separate pitchers for red and white wines.)

1  Tablespoon extra virgin olive oil

2 tsp. turbinado sugar (Find this at your local health food store.)

1/2  teaspoon Himalayan Crystal Salt

1/4  teaspoon black pepper

1/2  cup crumbled goat cheese

Spring Greens or Watercress

Directions

  • Whisk together vinegar, oil, sugar, salt and pepper.
  • Drizzle over cooked and cooled beets as well as the peaches and onions.
  • Toss gently and top with cheese. Serve on a bed of Spring greens or watercress.
  • Serve immediately or let flavors combine for 20-30 minutes before serving.

The naturally cooling and moistening qualities of the peaches and nutritive aspects of the beets make this an excellent salad option for Fire and Air-types. It is especially good for those who experience dryness.

Too much cooling and moist characteristics create imbalance for the Earth-type. While the Earth-type will likely be very attracted to this salad, I would add peppery watercress and be sure to add the onions to make this salad lighter and more stimulating. If the peaches and beets are more toppings for the salad, this will be better balanced for the Earth-type.
