Mandarin Orange Salad Perfect for Summer!

Simple, refreshing, perfect for hot days and the Fire-type Body-type!

I keep candied nuts of all kinds in my pantry of all kinds. You never know when you might need some for a salad or a small snack.

This is a refreshing salad that is great for hot summer days, or in the spring time when lettuces are extra fresh!

I make this salad when I can find fresh mandarin oranges or even tangerines. I avoid using canned foods almost entirely, and I particularly avoid those from countries with questionable quality standards.

Mandarin Orange Salad

Free of Dairy, Gluten, Corn, Eggs, Soy

Ingredients

*Use all organic and/or farm-raised ingredients.

Candied Slivered Almonds Topping Ingredients and Directions

  • 1 cup slivered almonds + 8 T. sugar
  • Caramelize the almonds in a nonstick pan on medium-high heat. Move the almonds around with a fork constantly. They will brown quickly.
  • Put candied almond slivers in a non-stick 9×13 pan and allow to cool. Once cooled, break into small chunks and put in a small container for later use.

Dressing Ingredients

2 tablespoons raw or turbinado sugar

2 tablespoons apple cider vinegar

4 tablespoons walnut or grapeseed oil

1/4 teaspoon almond extract

1/2 teaspoon Himalayan Crystal Salt- ground

dash of pepper

Salad Ingredients

10 cups Baby greens or romaine lettuce

1 cup chopped celery (small)

4 tablespoons chopped onions (small)

1 cup mandarin oranges – drain if canned

Although the canned oranges are simpler to use and make the salad a bit sweeter, I prefer to use fresh mandarin oranges, as they have not been processed and I can get them from reliable, organic sources.

Directions

Make the candied slivered almonds first to set aside to cool. Mix together the dressing ingredients and let sit while you clean and shop the salad ingredients. The sugar needs time to dissolve. Toss dressing with salad. Top with candied nuts. Enjoy!

This is a favorable  salad to almost all types. Everyone will enjoy the sweet flavors- who doesn’t enjoy a little sweetness?

There isn’t too much sweetness to greatly imbalance the Earth-type . 

Earth-types and Fire-types are especially attracted to the sweet flavors. There is just enough sweetness to this salad to be very palatable, but not too much to overcome the benefits of the salad.

Occasional sweet salads like this can be motivators for those who are not fans of salads to eat some greens.

Baby greens and romaine are sweeter and more balancing greens suited for the Air-type.
