A DF GF variation on the KISS classic!

Honestly, I debated whether to add this recipe. As I add recipes I’m presented with the question of, “what am I really wanting to convey through this wellness site?”.

We all want to enjoy life. And for many of us, we enjoy food. But this is a different kind of enjoyment, because we must eat to survive, but we do not need cookies to sustain our bodies… I believe (and practice) in giving my body the best tools to work with, enjoying the process and most of all, having a healthy attitude about it all! Peanut Butter Cookie

Free of Dairy, Gluten, Corn, Soy (check labels)

Servings

Makes approximately 10 medium-size cookies.

Preparation Time

10 minutes

Cook time

10-15 minutes

Ingredients

*Use all organic and/or farm-raised ingredients.

1 cup Organic, Creamy Peanut Butter

1 cup Brown Sugar

1 egg

1 teaspoon aluminum-free baking powder

Chocolate or carob chips

Directions

Pre-heat oven to 350 degrees Fahrenheit

Mix ingredients well

Bake on a non-stick cookie sheet- preferably on parchment paper rather than directly on aluminum.

Bake until light brown

Take out of oven and let cook on pan for a couple of minutes while pressing chocolate or carob chips on the top of the cookie.

If not allowed to cool before removing from pan, cookies tend to crumble apart.

Body-type and Wellness Insights

Earth-types are often great fans of peanut butter. Unfortunately, for them, peanuts do not promote balance in their system as they increase the damp, sluggish state. If I were someone with a lot of Earth characteristics an experiencing imbalance, I would not consume peanuts at all and then in very small amounts once I reached a more balanced state.

This plant-based protein and fat source is very helpful for the Air-types who need fair amounts of good, healthy fat in their diet to balance out the dry, light characteristics of their bodies. Fat is a good source of long-term energy, as opposed to quick-energy from sugars. Peanut butter provides nutritious, plant-based oils; and supplies long-term energy to the Air-types who burn energy quickly and easily.

The sweet, smooth quality of these ingredients are attractive to the Fire-type. The Fire and Earth-types, especially, can get carried away with sweet treats.

I have a lot of Air-type qualities and eat a fair amount of nuts. Peanuts are a legume and are very prone to mycotoxins. I have never really been fond of peanut butter. I almost never eat it now understanding what I do about mycotoxins.

According to Wikipedia – “A mycotoxin (from Greek μύκης (mykes, mukos) “fungus” and τοξικόν (toxikon) “poison”) is a toxic secondary metabolite produced by organisms of the fungus kingdom and is capable of causing disease and death in both humans and animals.” 

Although the desserts and treats on this site are more wholesome than what is typical, it is important to keep in mind that these are still treats. This recipe in particular, still has a fair amount of sugar in it. I enjoy treats like this in moderation. I may make 1-2 batches for us personally during the holiday season. Many of you may recognize this recipe. I did not create it. It is so common I figured it is “public knowledge” and am passing it on here.
