Potato Soup

A labor of love but oh so good and worth it!

Potatoes are a carb-rich food. In Traditional Chinese Medicine this type of food is seen as being high in the Yin component. Yin foods support the creation of fluids in the body- great if you want to lubricate your joints, not so good if you are suffering from a phlegmy condition or water-retention! That is why this dish is best for the active constitution of the Fire-type or for Air-types who typically need more of this tissue-building quality. *Special shout-out to my lovely Mother-in-law for the original recipe!

Potato Soup

Free of Gluten, Nuts, Corn, Eggs, Soy

Servings

Makes about 3 quarts or several large bowls

Ingredients

16 russet potatoes (about 5 pounds) cut into bite-size pieces (3/4” to 1” cubes)

2 cups (or more if desired) onions and celery chopped

1/4 cup butter

2 quarts chicken broth

half and half to color broth (approx. 1/4 – 1/2 cup)

salt to taste (I like Himalayan salt.)

pepper to taste

garlic powder to taste

1/2 tsp. fines herbs

*Use all organic and/or farm-raised ingredients.

Directions

In a large heavy bottom pot:

Saute onions and celery in butter until tender (will become nearly translucent).

Add potatoes and chicken broth and simer until potatoes are tender.

Let soup cool and then puree 2-3 cups of coup in blender and add back to pot; or alternatively use an immersion blender – no need to cool pot in this instance.

Add salt, pepper and garlic powder to taste.

Add half and half.

Garnish with fines herbs.

Body-type and Wellness Insights

Eath-types love this soup! They love all comfort-foods. Comfort-foods are innately calorie-rich foods. This recipe is a more wholesome, nutritious comfort-food, but it is important for Earth-types to note that if they are struggling with weight and weight-related issues or are pre-diabetic, this is not the ideal dish for them. It’s best to consume in moderation, as a side-dish on occasion, not a primary dish. I know, it’s tough, we tend to crave what causes most imbalance for our body-types.

Fire-types also really enjoy this dish and this soup is more balancing for this type as they tend to have faster metabolisms and need the cooling nature of potatoes and dairy to tame their bodies. The exception is the type of Fire-type that remains very thin but is pre-disposed to diabetes.

Air-types also benefit quite a bit from this warm, unctuous dish. The characteristics of warmth, healthy fats and grounding nature of potatoes are balancing for Air-types. The only exception is when an Air-type has weak digestion; which can be caused by acute or prolonged stress. Bitter herbs taken in tincture, tea or even oral spray forms can help remediate this condition. This is very important so the Air-type can digest and assimilate the vital nutrients in nourishing foods like these.

Water-types, again, refer to your second most dominant type.
